Yelling at her to eat seemed right on, to me. Severus wouldn't blurb out romantic nonsense, especially at their first meal together. I'm surprised though that he didn't insist, in this private setting, that she call him by his first name. All this 'Professor-ing' is not conducive to a friendlier atmosphere. It's like a wall between them.

I've never seen Snape as someone who allows anyone to use his given name unless there's a good reason for it. It is his last bastion of "reserve." I've written countless stories where Hermione and he are having sex, and she still calls him Professor. lol. Don't ask me why but it seemed suitable. Besides, this way, when he finally does tell Hermione to call him "Severus" you can be sure there's a damn good reason for it.

As far as the intimate setting, he made it appear they were "celebrating her success" rather than it being a romantic dinner. Saying, "call me Severus, Hermione" here, to me anyway, would have been awkward because there was no basis for that dramatic change. He told her he preferred being called by his former title. Why would he suddenly change this preference? This was still a business-based dinner, albeit a very nice one. Or that was what he wanted Hermione to think though they did talk about very personal matters.
